Alix’s Favorite Easy Postpartum Lentil Soup

When it comes to simple, nourishing meals, this soup is a winner. Packed with protein, fiber, and comforting flavors, it’s perfect for those busy postpartum days.

Red Lentil Soup (adapted from The Kitchn):

  • 1 cup red lentils

  • 1 large onion, diced

  • 2 carrots, chopped

  • 2 celery stalks, chopped

  • 4 cloves garlic, minced

  • 1 teaspoon cumin

  • 1 teaspoon turmeric

  • 6 cups vegetable broth

  • Lemon wedges for serving

Instructions:

  1. Sauté the onion, carrot, and celery until soft.

  2. Add garlic, cumin, and turmeric, stirring until fragrant.

  3. Add lentils and broth. Bring to a boil, then reduce to a simmer.

  4. Cook for 20-25 minutes or until lentils are soft.

  5. Blend partially for a creamy texture, or leave chunky for a heartier feel.

  6. Serve with a squeeze of lemon juice for brightness.
